One of the best things about the holidays is all the left overs. And one of the favorite things about Christmas’ left over ham is Ham & Cabbage Soup. I love it… hubby hates it. So I don’t make it very often. But when I do make it, I make a 6 quart pressure cooker full.
Here’s my recipe for Ham & Cabbage Soup
Ham & Cabbage Soup is easy to make & it’s a ‘stick to your ribs’ kind of meal.
What you’ll need:
6 quart pressure cooker (you could use a large Dutch Oven)
Left over ham (diced)
Sliced Green Onions (you could used regular onions)
Diced potatoes
Diced Carrots
Diced Cabbage (I used a small head)
Chicken Broth
Spices (Onion powder, Garlic powder, Parsley flakes)
Water
Olive Oil or Vegetable Oil
In the pressure cooker over medium heat:
Saute the green onions in the oil until tender. Remove pot from heat.
Dice & add the ham, then potatoes.
Then add the cabbage & carrots.
Add Chicken Broth, Spices & fill to level line with water.
Seal the pressure cooker, according to your manufacture’s directions. Bring soup to a boil, reduce heat & cook 20 minutes.
(If you’re using a Dutch Oven, cover with a lid, bring to a boil, reduce heat & simmer until the potatoes & carrots are tender.)
After the soup has cooked for 20 minutes, cool the pressure cooker with cold running water.
Once the pressure valve has gone down, you can open the pressure cooker. Your soup is done!
Plate it up, add salt & pepper to taste, and enjoy!
