Jambalaya

This is a recipe that was given to me back in the late 80’s by my friend, Doug. Doug had spent some time in New Orleans where he learned to make this recipe. It is such a unique meal & I thank him for teaching me.

½ # Bacon (Cubed)

½ # Ham (Diced)

½ # Chicken (Cubed)

1/2 # Sausage

1 large Green Pepper (Diced)

1 large Onion (Diced)

6 Celery Hearts (Diced)

1 (12 oz) can chicken stock

1 (8 oz.) can Tomato Sauce

1 (4 oz.) can Tomato Paste

2 whole Bay Leaves

¼ tsp. Red, White, Black Pepper

1 Cup Long Grain Rice

Fry Bacon – Remove

Fry Ham & Chicken – Remove

Fry Sausage – Remove

Fry Onions, Celery & Peppers until tender – Remove

In separate pot, heat chicken stock to low boil.

Add Spices, Veggies, Rice, Tomato Sauce & Tomato Paste.

Simmer 15 minutes. 

Add Meat

Simmer 10 more minutes.
