I got bored with the usual meals that we’ve been having, so I went through my recipe box for some new ideas. I found one of my Mama’s old recipes that I haven’t made for years. It’s an easy recipe that has a ‘stick to your ribs’ quality and it’s so good.
I hope you’ll enjoy my Mama’s Beefaroni.
The ingredients:
1# ground beef
2 cans of tomato soup
(I like the store brand because it’s not as strong tasting as the the name brand.)
1/2 soup can of water
1 medium onion (chopped)
1# elbow macaroni
(Spices to taste)
Garlic Powder
Onion Powder
Paprika
Oregano
Salt & Peppper
Sugar (or Splenda)
Cook the macaroni to package directions. Set aside.
Brown the ground meat & chopped onions until the meat is browned & onions are tender.
Add the 2 cans of tomato soup & the half can of water to the browned meat.
Mix well and simmer a few minutes.
Add the spices.
I don’t measure spices. I like more oregano than Mama did.
Stir everything together & simmer on low heat until slightly thickened. (about 20 minutes. Stir often so that it doesn’t stick to the bottom of the pan.
Add the cooked & rinsed macaroni to the meat mixture.
Blend all ingredients together so that the tomato mixture covers all of the macaroni.
Serve!
This is so much better than the canned, and it’s just as good reheated.
And with the cold weather starting to come, it’s a good meal to warm the soul.
