I have type 2 Diabetes. It has been a long journey for me & it hasn’t been an easy journey. My entire world revolves around food & how often I eat. This recipe helps me to detoxify my system. When I was first diagnosed, the doctors do what they usually do, put me on expensive pills & constant warnings that if I don’t get this under control, I would need to use insulin. To top it all off, they said that my cholesterol & blood pressure were too high. I was going broke & there didn’t seem to be a way out.
That’s when I went to my chiropractor, who does everything naturally, and asked him if there was a natural way to lower my numbers. He put me on The Page Fundamental Diet. Basically, the diet is, If God didn’t make it, don’t eat it. The diet is in 2 phases. My soup is made from the items that I can have in phase 1.
I am now off all of my pills & my numbers are in the ‘good’ range. What they don’t tell you is that the diabetic diet keeps you diabetic. They also don’t tell you that carbohydrates raise your sugar levels. I must admit, sometimes I fall off the wagon & once you start to eat carbs, you crave them. The only way I can get rid of the cravings is to make my ‘Detox Soup’. I eat it for most meals for about a week. By the end of the week, I’m no longer craving carbs. I tend to make 2 pots of this soup in a week.
This is how I make it:
I start with a pound or two of lean beef cubes or cut up chicken breast.
Then I take items that are on the list & what I have in my refrigerator. I cut everything up into bite sized pieces.
I also use some canned or frozen items if I don’t have fresh available. I add soup broth to further flavor the soup. (beef broth if I’m using beef cubes, chicken broth if I’m using chicken). To be honest, I like the chicken better.
This is a no-no, but when using beef cubes, I dredge the cubes in flour.
I use olive oil to brown the beef in my pressure cooker. (Using a pressure cooker makes the meat very tender)
After browning the meat, I add all of the veggies, canned goods & broth. You can add spices if you like. I always add the cabbage last. (just something I was taught years ago) Close the pressure cooker, bring it up to a boil, reduce the heat so that the valve rocks gently & cook for 20 minutes.
This is basically a veggie soup without the carbs from potatoes or grains. There is so much flavor in this soup that it never bothers me to eat it for a week.
The only thing that I think it needs is some sea salt.
It’s so good.
I am in no way telling you to stop taking your medications, but I am telling you what works for me. Besides, it’s a very good soup.
