Spaghetti Pie is one of those recipes that I’ve had in my recipe box for years. What does it taste like? Spaghetti pie is a cross between Pizza, Spaghetti & Lasagna all rolled up in one. It’s an easy meal to make & tastes just as good reheated as it did on the day you made it. It has become one of my son’s favorites and he asks to have it packed for his lunch to take to work. I hope you like it… we do.
What you’ll need:
6 oz. spaghetti (cooked, rinsed, drained) 1/4 cup chopped green pepper
2 Tbsp. butter or margarine 1 can (8 oz.) tomatoes, cut up
1/3 cup grated Parmesan cheese 1 can (6oz.) tomato paste
2 eggs (well beaten) 1 tsp. sugar or Splenda
1 cup cottage cheese (8 oz.) 1 tsp. dried oregano, crushed
1 lb. ground beef 1/2 tsp. garlic powder
1/2 cup chopped onion 1/2 cup shredded mozzarella cheese
I like angel hair pasta for this dish, but you could use just about any pasta. This is a good way to use left over cooked pasta. Stir the butter into hot pasta. (I usually have to reheat it after rinsing.) Once the butter is melted, stir in the Parmesan cheese and beaten eggs.
Mix well.
Press the pasta mixture into a pie pan to form the crust.
Measure out the cup of cottage cheese & spread over the bottom of the spaghetti crust. Set it aside.
In a skillet, cook the ground beef, onion & green pepper until the vegetables are tender & the meat is browned.
Drain off any excess fat.
Stir in un-drained tomatoes, tomato paste, sugar, oregano and garlic powder. Heat thoroughly.
Turn meat mixture into the spaghetti crust. Bake, uncovered, 350 degree oven for 20 minutes.
Remove the pie from the oven.
Sprinkle mozzarella cheese on top. Bake 5 minutes longer or until cheese melts.
Remove from oven, slice in pie wedges, serve & enjoy!
