I got this recipe years ago, when my Mama gave me my first blender. Needless to say, that was a long time ago. Using a blender to make this recipe cuts the preparation time in half. Hubby doesn’t like nuts, but they can be added easily.
What you’ll need:
Your dry ingredients:
2 1/2 cups sifted flour
2/3 cup sugar or Splenda
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon nutmeg
Wet ingredients:
2 eggs
1/3 cup milk
1/3 cup melted shortening or cooking oil
1 1/2 cups sliced bananas (about 2 medium sized)
1 cup pecan halves (optional)
Electric Blender
Loaf Pan
Sift the dry ingredients together in a large bowl
Add the wet ingredients to the blender.
Blend the wet ingredients on a medium speed for 5 seconds.
If you’re going to add nuts to the recipe, this is when they are added. Add the nuts to the wet ingredients & blend on a medium speed for 3 or 4 seconds until nuts are coarsely chopped.
Pour wet ingredients over the dry ingredients.
Mix until batter is moist.
Grease a loaf pan
Pour batter into the loaf pan. Bake 350 degrees for 1 hour.
