Because I’m not supposed to have carbs, this is one of the meals that I have when I make Bacon Cheeseburgers for my guys. It’s so yummy that I always go back for seconds.
What I use:
Salad Mix, Tomatoes, Cucumbers, Garbanzo Beans, Bacon, Cheddar Cheese and Hamburger.
First, I cook the hamburgers. (I use water to cook them because the meat is so lean & cooking with water seems to pull any fat away from the meat)
Once the hamburgers are done, I add cheese to the burgers that I’m making for my hubby & son. Mine are kept separate with no cheese.
I put them on buns & top them with bacon. Guy’s burgers done.
There are even left-overs to pack in lunches.
On to my dinner. The first thing that I do is put the left-over bacon in a Ziploc bag.
Then I ‘scrub’ the bag, just like I’d be scrubbing a stain out of clothing. It breaks up the bacon in tiny pieces. The more you ‘scrub’ the smaller the pieces become. (and your hands don’t get greasy)
Then I take one of the naked hamburgers, cut it into squares & then mash it with a fork until the pieces are tiny.
Next, I cut up the tomatoes, cucumbers & rinse & drain the garbanzo beans. Time to assemble!
I like my salads in layers, so I start with a bed of the Salad Mix
Add the tomatoes, then cucumbers:
Then the Garbanzo Bean & Crumbled hamburger:
Finish up with the Bacon & Cheddar Cheese:
Top it off with your dressing of choice. Mine is always Cucumber Ranch.

Thought I’d share a little tip that I learned from a friend who is a vegetarian. If you put a paper towel in the bottom of your container when storing your salad mix, it lasts longer.
Left over ingredients are all ready for another salad!
And what did I do with the other naked hamburger? This is a normal dinner for me. Bacon topped plain hamburger & green beans on the side.
