This recipe for Apple Muffins is easy to make, is a people pleaser (my guys love it) they make a quick & tasty breakfast, and it packs very well in lunches.
What you’ll need:
2 cups of sifted flour
1/2 cup of sugar
3 teaspoons of baking powder
1 teaspoon of pumpkin pie spice mix
3/4 teaspoon salt
1/4 cup of melted shortening or vegetable oil
2 eggs
1/3 cup milk
1 1/2 cups coarsely chopped unpeeled apple
Electric Blender
Sift the dry ingredients together in a large mixing bowl and set aside.
Core the apples & cube.
Put all of the wet ingredients into the blender.
Blend the wet ingredients on medium speed for 10 seconds.
Pour over dry ingredients and mix until moistened.
Fill muffin cups 3/4 full, bake 400 degrees for 20 minutes.
When the 20 minutes is finished, test to see if they’re done by inserting a toothpick in the center. If the toothpick comes out clean, they’re done. If it doesn’t come out clean, bake for another 5 minutes.
