Microwave Yams ~ Sweet Potatoes

Because I’m diabetic, I’m on a somewhat strict diet. The name of my diet is the Page Fundamental Diet. (Basically, it’s ~ If God didn’t make it, don’t eat it.) One of the things that is on this diet is Yams (or Sweet Potatoes, depending on which part of the country you live in) A Sweet Potato is filling & perfect for me for lunch.

Wash a large Yam well & dry it.

Place on Microwavable plate & pierce it with a very sharp knife on both sides.

Put in microwave for 6 minutes. When the 6 minutes is done, test to see if it is done all the way through with a sharp knife or fork.

Slice the potato down the center & across the potato 3 times.

Mash with a fork.

Add butter, sugar or Splenda & sprinkle Cinnamon if desired.
