I got this recipe from my ex-MIL, at least 25 years ago. She was an excellent cook. When you live in Western Pennsylvania, this is a taste that we’re all familiar with. It uses leftovers to create a very tasty side dish, that is a nice change from the usual.
This recipe uses 4 ingredients:
Leftover mashed potatoes
Leftover cooked noodles
1 stick of butter
1 small onion (diced)
Melt the butter & saute the onions until they’re translucent.
Add the mashed potatoes, stir until heated. (you can add cheese now if you want to)
Add the noodles, mix well, heat thoroughly, stirring frequently so it doesn’t burn.
Serve & enjoy!
