Texas Sheet Cake

My Mother-In-Law gave me her recipe for Texas Sheet Cake years ago.  It’s like a chocolate cake with icing that tastes like fudge.  It’s one of my husband’s favorite desserts.  It’s easy to make & I’ll show you an easy way to pack it in a lunch!  I hope you enjoy it as much as he does.

Texas Sheet Cake

What you’ll need:

Cake Mix:                                                  Icing:

2 cups flour                                              1 stick butter or margarine

2 cups sugar                                            4 tbsp. cocoa

1 tsp. salt                                                 1 lb. powdered sugar

1 stick of butter or margarine                   1 tsp. vanilla extract

1 cup water                                               6 tbsp. milk

4 tbsp. cocoa

2 eggs

1 tsp. baking soda

1 cup sour cream

In a large bowl, have ready: 2 cups flour, 2 cups sugar, 1 tsp. salt.

In a medium sauce pan, mix: 2 sticks of butter, 1 cup water & 4 tbsp. cocoa.

Boil 2 minutes.

Add hot mixture to dry ingredients & beat well.

Add 2 eggs, 1 tsp. baking soda, 1 cup sour cream.

Beat well & pour into a greased & floured 9″ x 13″ pan.

Bake 350 degrees for 20 minutes or until an inserted toothpick comes out clean.

Icing:

Boil 1 stick butter, 4 tbsp. cocoa, for 1 minute.

Add 1 pound of powdered sugar, 1 tsp. vanilla extract & 6 tbs. milk.

Beat well.

Spread on warm cake.  Let cool.

To easily pack this cake for lunches, cut the cake into squares.

Place a square of cake on plastic wrap.  Add a second square of cake on top of the first piece, icing sides together.

Wrap the cake with the remaining plastic wrap.  No mess and packs well.
