This dish is the one that I’m always asked to bring for holiday dinners. It’s practically sugar free (the sweet potatoes do have natural sugar in them) & it’s something that I can eat without going into sugar shock. It’s easy to make & tastes so good.
You only need a few ingredients & it only takes a few steps to make this dish.
1 large can of yams (or sweet potatoes), Splenda, Splenda Brown Sugar Blend, Sugar Free Syrup, 1/2 to 3/4 cups of Water & Cinnamon.
A little tip for storing the brown sugar:
Press out all of the air from the brown sugar blend package and fold it over so the air stays out. Keep it in a Ziploc bag with all of the air squeezed out. I’ve had this bag for 2 years, and it’s still moist.
Drain all of the liquid from the yams & rinse and drain them well. Place them in a medium sauce pan & add water.
Sprinkle the tops of the yams with the brown sugar blend. Drizzle the sugar free syrup over the yams. (sorry, I never measure, but season everything to taste)
Add Splenda & cinnamon.
Cover and bring to a boil. Reduce heat and simmer for 15 minutes.
Stir.
Serve.
