Veggie Rice Soup

This is one of those soups that is so filling & really easy to make. It’s a vegetarian soup recipe that is great to have on hand. The hardest part is cutting the veggies!

Veggie Rice Soup

2 Tablespoons Olive Oil

1 medium Onion, diced

2 cups Carrots, diced

2 ribs Celery, diced

1 clove Garlic, minced

2 cups Garbanzo Beans (Cooked or canned, drained)

1 lg. can Diced or Crushed Tomatoes

32 oz. Veggie Broth

2 Bay Leaves

½ tsp. Basil

¼ tsp. Thyme

Onion Powder to taste

Garlic Powder to taste

Salt & Pepper to taste

2 cups fresh Spinach

2 cups cooked Rice

Heat Olive Oil in large pot.  Add Onions, Carrots, Celery & cook for 5 to 7 minutes.

Add Garlic & cook for 1 minute

Add Garbanzo Beans, Tomatoes, Veggie Broth & spices.

Cover & cook over low heat for 30 minutes, stirring occasionally.

Add Spinach & cooked Rice & simmer for 2 minutes.

Remove Bay Leaves.
